Mutton Curry(thanjavur style)
This is a traditional way of making mutton curry in my home town which is served with rice.The secret of the recipe is the freshly ground masala which is simmered with coconut paste and other spices.My mom makes this curry with shallots which gives an excellent taste to this recipe.

Clean and cut the mutton to the desired size and pressure cook it with turmeric powder,chilly powder,one onion, tomato and 1/2 tsp of salt for 5-6 whistles in a medium flame.Meanwhile fry the red chillies,pepper,fennel seeds and jeera in 1/2 tsp of oil and grind it to smooth paste with coriander powder and keep it aside.Then grind the coconut with fennel seeds to make a fine paste.
Heat 3tbs of oil in a pan and season it with cloves and cinnamon and fry the remaining onions till it becomes transparent.Add in the ginger&garlic paste and saute it and finally add the tomatoes and cook it till it becomes mushy.
Now add the ground paste and fry it for a while, add in salt and the mutton stock from the cooked mutton and let it boil till the raw smell goes off.At this stage add in the coconut paste and cook it for a while.To this add the cooked mutton pieces and bring it to a boil or till it reaches the desired consistency.Garnish it with coriander leaves.
Transfer it to a serving bowl.
Ready to enjoy with rice or parota.

- A tsp of tamarind paste can be added for extra sourness.
